Create the ultimate crowd-pleasing Anzac biscuits with three delicious textures: crunchy, chewy, and crisp.
Ingredients:
  • 150g (1 cup) plain flour
  • 90g (1 cup) Traditional Rolled Oats (see Notes)
  • 85g (1 cup) desiccated coconut
  • 100g (1/2 cup, firmly packed) brown sugar
  • 55g (1/4 cup) caster sugar
  • 125g butter
  • 53.60 gm golden syrup
  • 40.00 gm water
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 160°C and line 2 baking trays with non-stick baking paper.
  • In a large bowl, mix together flour, oats, coconut, and combined sugars.
  • In a small saucepan over medium heat, blend the butter, golden syrup, and water until the butter melts and the mixture turns smooth. Incorporate the bicarbonate of soda. Pour the mixture into the oats and stir until fully combined.
  • Shape level tablespoonfuls of the oat mixture into balls, spacing them 5cm apart on the prepared trays. Flatten each ball to about 1cm thickness. Bake for 15 minutes or until light golden, rotating trays halfway through. Allow them to cool for 10 minutes before transferring to wire racks to cool completely.
