Transform Anzac biscuit leftovers into delicious slice.
Ingredients:
  • 250.00 ml plain flour
  • 150.00 gm rolled oats
  • 141.90 gm raw caster sugar
  • 56.10 gm desiccated coconut
  • 125g butter, chopped
  • 53.60 gm golden syrup
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm slice pan and line it with baking paper, allowing a 2cm overhang.
  • In a large bowl, mix together flour, oats, sugar, and coconut, then create a well in the center. In a saucepan over low heat, combine butter, syrup, and 2 tablespoons cold water. Cook and stir occasionally for 4 to 5 minutes until the butter melts. Remove from heat and stir in bicarbonate of soda. Combine the butter mixture with the oat mixture.
  • Spread the mixture evenly in the prepared pan by pressing with the back of a spoon. Bake until golden for 25 to 30 minutes. Allow it to cool completely in the pan before cutting into pieces and serving.
