German yeasted dessert, quick rise, ideal for breakfast or snack - less sweet than typical cakes.
Ingredients:
2.25 cups siftedall-purpose flour
1.125 cups warm milk
0.25 cupwhite sugar
1 (.25 ounce) packageactive dry yeast
6tablespoons butter, softened
1tablespoonvanilla extract
1pinchsalt
3 large apples - peeled, cored, and sliced
0.75 cupsiftedall-purpose flour
2ounces candied lemon peel, chopped
0.5 teaspoonground cinnamon
0.25 teaspoonground nutmeg
Instructions:
Prepare your 9x13-inch baking dish or 9-inch springform pan by greasing the bottom and sides.
In a large bowl, use an electric mixer to beat together 2 1/4 cups of flour, milk, 1/4 cup of sugar, yeast, 6 tablespoons of butter, vanilla extract, and a pinch of salt on high speed for about 5 minutes until the dough is smooth. Transfer the dough into a baking dish and press it up the sides. Gently press apple slices into the dough.
Combine 1 cup sugar, 3/4 cup flour, candied lemon peel, cinnamon, nutmeg, and a pinch of salt in a bowl. Cut in 1/2 cup butter using a knife or pastry blender until it resembles coarse crumbs. Sprinkle the mixture over the apples and let it rise for 30 minutes.
Preheat the oven to a toasty 400 degrees F (200 degrees C).
Bake in a preheated oven until the cake is golden brown and the apples are tender, approximately 35 minutes.
