German yeasted dessert, quick rise, ideal for breakfast or snack - less sweet than typical cakes.
Ingredients:
  • 2.25 cups sifted all-purpose flour
  • 1.125 cups warm milk
  • 0.25 cup white sugar
  • 1 (.25 ounce) package active dry yeast
  • 6 tablespoons butter, softened
  • 1 tablespoon vanilla extract
  • 1 pinch salt
  • 3 large apples - peeled, cored, and sliced
  • 0.75 cup sifted all-purpose flour
  • 2 ounces candied lemon peel, chopped
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Prepare your 9x13-inch baking dish or 9-inch springform pan by greasing the bottom and sides.
  • In a large bowl, use an electric mixer to beat together 2 1/4 cups of flour, milk, 1/4 cup of sugar, yeast, 6 tablespoons of butter, vanilla extract, and a pinch of salt on high speed for about 5 minutes until the dough is smooth. Transfer the dough into a baking dish and press it up the sides. Gently press apple slices into the dough.
  • Combine 1 cup sugar, 3/4 cup flour, candied lemon peel, cinnamon, nutmeg, and a pinch of salt in a bowl. Cut in 1/2 cup butter using a knife or pastry blender until it resembles coarse crumbs. Sprinkle the mixture over the apples and let it rise for 30 minutes.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Bake in a preheated oven until the cake is golden brown and the apples are tender, approximately 35 minutes.
