Buttery cake topped with apples and raisins for a beautiful and sweet dessert.
Ingredients:
  • 0.5 cup raisins
  • 2 cups boiling water
  • 0.5 cup butter or margarine, softened
  • 1 cup white sugar
  • 0.25 teaspoon almond extract
  • 0.75 cup milk
  • 8 apples, peeled, cored and sliced
  • 0.5 cup melted butter or margarine
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C). Lightly grease and flour two 9-inch round cake pans. Let the raisins bathe in boiling water while the oven works its magic.
  • In a bowl, whisk together 1/2 cup of butter or margarine with 1 cup of sugar until light and creamy. Add the eggs one at a time, followed by almond extract and milk. Combine the flour, salt, and baking powder, then gently fold into the butter mixture to create a soft dough.
  • Split the dough in half and press each half into the bottom of a greased cake pan, shaping it up the sides. Drain the raisins and sprinkle them over the dough. Create a spiral pattern with the apple slices over the raisins, slightly overlapping. Top with remaining 1/2 cup sugar and drizzle with 1/2 cup melted butter or margarine.
  • Place the dish in a preheated oven and bake for about 30 minutes, until the apples are tender and the crust is golden brown. Serve the delicious dessert warm or at room temperature.
