Indulge in a guilt-free apple, almond, and cinnamon crisp with only 224 calories per serving.
Ingredients:
  • 1kg Granny Smith apples, peeled, cut into 2cm pieces
  • 36.00 gm low GI cane sugar
  • 5cm piece lemon rind
  • 21.00 gm lemon juice
  • 5.00 gm ground cinnamon
  • 2.50 gm cornflour
  • 5.00 gm water
  • 45g (1/4 cup) icing sugar mixture
  • 55g (1/2 cup) almond meal
  • 20.00 gm self-raising flour
  • 3 egg whites
  • 10.00 gm rolled oats
  • Low-fat reduced-sugar custard, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. In a saucepan over medium-low heat, combine apple, cane sugar, lemon rind, lemon juice, and 1 tsp cinnamon. Cook and stir occasionally for 3 minutes until sugar dissolves. Simmer covered on low heat for 7 minutes until apples are tender. Mix cornflour and water in a small bowl, then add to the apple mixture. Cook and stir for 2 minutes until the mixture thickens. Transfer the mixture to a 1L (4 cup) baking dish and let cool for 10 minutes.
  • In a bowl, mix icing sugar, almond meal, flour, and the rest of the cinnamon. In a separate clean, dry bowl, use electric beaters to whip the egg white until stiff peaks form. Gently fold the egg white into the icing sugar mixture in 2 batches until just combined.
  • Spread the apple mixture evenly in the dish and top with a layer of oats. Bake until golden and puffed, about 30 minutes. Let it stand for 10 minutes before serving alongside custard.
