Kid-friendly veggie and fiber-packed muffins with endless variations like zucchini, pear, and banana!
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 0.5 cup melted butter
  • 0.5 cup honey
  • 0.5 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup diced apple
  • 1 cup shredded carrot
  • 2 tablespoons chia seeds
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 16 muffin cups with liners.
  • In a bowl, mix together all-purpose flour, whole wheat flour, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, melted butter, honey, brown sugar, egg, and vanilla extract. Add the flour mixture and mix until just combined. Gently fold in the apple, carrot, and chia seeds. Using a spoon, fill the muffin cups with the batter.
  • Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow to cool for 5 minutes before placing on a wire rack.
