Delicious morning muffins packed with carrot, apple, and bran cereal for a sweet and flavorful kickstart to your day.
Ingredients:
  • 1.75 cups bran cereal
  • 1.25 cups all-purpose flour
  • 0.75 cup white sugar
  • 1.25 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 egg
  • 0.75 cup buttermilk
  • 0.25 cup canola oil
  • 0.75 cup peeled and finely chopped apple
  • 0.75 cup grated carrot
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then nestle 12 muffin cups snugly with paper liners.
  • Combine bran cereal, flour, sugar, baking soda, cinnamon, and salt in a bowl. In another bowl, whisk together egg, buttermilk, and canola oil. Pour the wet ingredients into the dry mixture, then fold in apple, carrot, and walnuts. Fill muffin cups 3/4 full with batter.
  • Bake in a preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pans for 5 minutes before transferring to a wire rack to finish cooling.
