Irresistible apple carrot muffins - perfect for any time of day!
Ingredients:
  • 6 tablespoons water
  • 2 tablespoons ground flax seeds
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1.5 cups grated carrots
  • 1.5 cups finely chopped apples
  • 1 teaspoon kosher salt
  • 0.75 cup unsweetened applesauce
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 0.5 cup olive oil
  • 2 large eggs
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a muffin tin by greasing 20 cups or lining them with paper liners.
  • Combine the water and flax seeds in a bowl.
  • Combine all-purpose flour, whole wheat flour, baking soda, and salt in a spacious bowl. Mix in carrots and chopped apples until evenly coated.
  • Combine applesauce, white sugar, brown sugar, olive oil, eggs, walnuts, and flax seeds with the flour mixture, stirring until a well-combined batter forms.
  • Fill each muffin cup with batter, leaving about 1/4 of the cup empty to allow room for the muffins to rise while baking.
  • Bake in the hot oven until golden and the tops bounce back when lightly touched, about 18 minutes.
