Mini Apple Pies with Pillsbury Crust

Easy and delicious mini apple pies, great for sharing! Use homemade or store-bought pie crust for convenience.
Ingredients:
  • 2 tablespoons butter
  • 0.25 cup flour
  • 6 Pink Lady apples - peeled, cored, and sliced
  • 0.25 cup apple juice
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup brown sugar
  • 0.5 teaspoon ground cinnamon
  • 1 (15 ounce) package refrigerated pie crust (such as Pillsbury®)
Instructions:
  • In a saucepan over medium heat, melt butter and whisk in flour until smooth. Add apples, apple juice, sugar, brown sugar, lemon juice, and cinnamon. Cook for 5 to 7 minutes, stirring occasionally, until the mixture is thick and bubbly.
  • Preheat the oven to 425°F (220°C) while you prepare the rest of the recipe.
  • Cut out 4 circles from the pie crust, ensuring there is enough dough to fit the tin and seal the crusts. Gently place 1 dough circle into the bottom of each of the 2 mini pie tins. Fill with the desired filling. Lay the top crusts over the filling, then fold any extra dough under the bottom crust edges and press to seal. Create a decorative edge by fluting and cutting slits in the top crusts.
  • Bake in the preheated oven for 15 minutes. Then cover the edges of the crusts with strips of aluminum foil to prevent burning and bake for an additional 25-30 minutes until the apples are tender and the crusts are golden brown.
  • Allow the pies to cool on a rack for a minimum of 2 hours before serving.
