Create mini hand pies with air fried apple-cinnamon filling, topped with a sweet glaze.
Ingredients:
  • 2 medium Granny Smith apples, diced
  • 6 tablespoons brown sugar
  • 4 tablespoons butter
  • 1 teaspoon cornstarch
  • 2 teaspoons cold water
  • 0.5 (14 ounce) package pastry for a 9-inch double crust pie
  • 0.5 tablespoon grapeseed oil
  • 0.25 cup confectioners' sugar
  • 1 teaspoon milk, or more as needed
Instructions:
  • In a nonstick skillet, sizzle together apples, brown sugar, butter, and cinnamon until apples are tender, for about 5 minutes on medium heat.
  • Whisk cornstarch into cold water until smooth. Pour into apple mixture and simmer until sauce thickens, approximately 1 minute. Set apple pie filling aside off heat to cool as you work on the crust.
  • Unroll pie crust on a floured surface, smoothing it out. Cut into rectangles that can fit two in the air fryer. Repeat with remaining crust to make 8 equal rectangles, re-rolling any scraps as needed.
  • Moisten the edges of 4 rectangles with water. Spoon apple filling onto the center of each rectangle, leaving a 1/2-inch border. Top each with the remaining 4 rectangles, slightly larger. Seal the edges with a fork, then make 4 small slits on top of each pie.
  • Preheat the air fryer to 385 degrees F (195 degrees C following the manufacturer's guidelines.
  • Coat the air fryer basket with a thin layer of cooking spray. Brush oil onto the tops of 2 pies and carefully place them into the air fryer basket using a spatula.
  • Place the pies in the air fryer and bake until golden brown for about 8 minutes. Remove them from the basket and repeat with the remaining 2 pies.
  • Combine confectioners' sugar and milk in a small bowl. Brush the glaze onto the warm pies and let it dry. Enjoy the pies warm or at room temperature.
