Whip up some delicious fruit muffins, great for snack time!
Ingredients:
  • 150.00 gm self-raising flour, sifted
  • 1.25 gm cinnamon
  • 59.40 gm brown sugar
  • 125.00 ml Greek Style Yoghurt
  • 64.38 gm milk
  • 1 egg, lightly beaten
  • 75.90 gm canola oil
  • 62.50 ml finely chopped apple
  • 62.50 ml finely chopped strawberries
Instructions:
  • Preheat your oven to 180°C. Prepare two 12-hole mini muffin pans by greasing them lightly or lining them with patty cases. In a large bowl, combine the flour, cinnamon, and brown sugar, then create a well in the center.
  • Combine the yogurt, milk, egg, oil, apple, and strawberries in a bowl, and mix thoroughly.
  • Combine the yoghurt mixture with the flour mixture, stirring gently until fully incorporated.
  • Fill the muffin pans with the mixture. Bake until golden brown and cooked through, which should take 12-15 minutes. Enjoy warm or store in an airtight container for up to 2 days.
