Apple and strawberry crumble cake

Indulge in a classic crumb cake bursting with juicy apples and sweet strawberries.
Ingredients:
  • Melted butter, to grease
  • 200g butter, at room temperature
  • 155g (3/4 cup) caster sugar
  • 8.80 gm vanilla essence
  • 2 eggs, at room temperature
  • 150g (1 cup) self-raising flour
  • 150g (1 cup) plain flour
  • 185ml (3/4 cup) milk
  • 1 Granny Smith apple, peeled, cored, thickly sliced
  • 200g strawberries, washed, hulled, halved
  • 75g (1/2 cup) plain flour
  • 50g chilled butter, chopped
  • 55g (1/4 cup, firmly packed) brown sugar
Instructions:
  • - Preheat your oven to 180°C. - Brush a 20cm round springform pan with melted butter to lightly coat. - Line the base with non-stick baking paper and place the pan on a baking tray.
  • Beat butter, sugar, and vanilla with an electric beater in a bowl until pale and creamy. Add eggs one at a time, beating well after each addition. Fold in flour and milk with a large metal spoon until well combined.
  • Spread the mixture evenly into the pan and gently use the back of a spoon to create a smooth surface. Decoratively arrange the apple and strawberry slices on top.
  • Combine the flour and butter in a bowl, then use your fingertips to crumble the butter into the flour until it forms a coarse breadcrumb-like mixture. Mix in the sugar.
  • Evenly scatter the crumble topping over the apple and strawberry. Bake for 1 hour and 10 minutes until a skewer comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack. Enjoy warm or at room temperature.
