Mini apple pies

Irresistible bite-sized apple pies, great for snacking and entertaining.
Ingredients:
  • 312.50 ml plain flour
  • 70.95 gm caster sugar, plus extra to sprinkle
  • 25.00 gm almond meal
  • 125g cold butter, chopped
  • 1 egg
  • 1-40.00 gm water
  • Cream, to serve
  • 400g can pie apple
  • 2.50 gm mixed spice
Instructions:
  • In a large bowl, delicately sift the flour. Mix in the sugar and almond meal. Using just your fingertips, gently rub in the butter until the mixture looks like breadcrumbs.
  • Combine the egg and water until a firm, pliable dough forms. Lightly knead the dough, shape it into a ball, wrap it in plastic wrap, and chill for 30 minutes.
  • In a bowl, mix together the apples and spices to create the delicious filling. Set aside for later.
  • Preheat your oven to 200C and lightly grease each muffin pan recess.
  • Roll out 2/3 of the pastry to 0.5cm thickness between 2 sheets of baking paper. Use an 8cm cutter to cut out 12 circles. Gently press them into the recesses, trim the edges, and prick the bases with a fork. Bake for 10 minutes, then cool slightly before spooning the filling into each case.
  • Cover the pies with the remaining pastry, either grated or crumbled. Sprinkle generously with extra sugar. Bake for 20-25 minutes until they are cooked and turn golden brown. Serve the warm pies with a dollop of cream.
