Create stunning mini apple pies by rolling thin apple slices into roses for an elegant and impressive presentation.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 tablespoon white sugar
  • 0.5 cup very cold butter, cut into 1/2-inch cubes
  • 3 tablespoons ice-cold water
  • 2 Pink Lady apples
  • 3 tablespoons lemon juice
  • 0.5 cup brown sugar, divided
  • 0.25 cup unsalted butter, melted, divided
  • 0.25 cup strawberry preserves
Instructions:
  • In a large bowl, mix together the flour, white sugar, and salt. Add cubed butter and use a pastry blender, 2 knives, or your fingertips to blend until the mixture looks like coarse meal. Gently stir in water until the dough forms into a ball.
  • Shape the dough into a disc, wrap it tightly with plastic wrap, and refrigerate for a minimum of 1 hour.
  • Preheat your oven to 375°F (190°C) and generously butter a muffin tin.
  • Flatten the dough to 1/4-inch thickness on a floured surface. Use a biscuit cutter or glass to cut out nine 3 1/2-inch rounds. Gently mold the rounds into the muffin tin, shaping them into cup forms along the sides. Chill in the refrigerator.
  • Slice around the core of the apples on 4 sides to remove it. Use a mandolin or a very sharp knife to thinly slice the apples into half moons. Combine the apple slices with lemon juice in a microwave-safe bowl.
  • Mix together the enchanting combination of 1/4 cup of brown sugar and 2 tablespoons of melted butter in a cozy little bowl. Gently drizzle over the apples and give them a delightful toss to ensure everything is beautifully coated. Pop the apples in the microwave until they are soft and pliable, which should take about 1 minute.
  • Place 10 apple slices in a row on a flat surface with the skin side facing you, slightly overlapping each slice. Roll them up tightly. Add 2 to 8 more slices around each rose as needed to achieve desired size. Repeat with the rest of the slices to create 8 apple roses in total.
  • Mix together the remaining 1/4 cup of brown sugar and 2 tablespoons of melted butter in a small bowl. Brush this sweet mixture over the bottom of each dough cup, then carefully place an apple rose in each cup.
  • Bake until the dough is golden and the apples are tender, about 25-30 minutes in the preheated oven.
  • Microwave strawberry preserves in a bowl until melted, approximately 30 seconds. Brush the melted preserves over each apple rose for a sweet finishing touch.
