Create a delicious chicken, fennel and apple salad in just 20 minutes!
Ingredients:
  • 60ml olive oil
  • 400g can chickpeas, rinsed, drained
  • 1 small red onion, thinly sliced
  • 2 celery sticks, thinly sliced
  • 1 small fennel, thinly sliced, fronds reserved
  • 1 Pink Lady apple, thinly sliced
  • 500.00 ml cooked chicken, shredded
  • 42.00 gm lemon juice
  • 1 garlic clove, crushed
  • 125.00 ml flat-leaf parsley leaves
Instructions:
  • In a small frying pan over medium heat, heat 1 tablespoon of oil until shimmering. Stir occasionally and cook chickpeas for 5 minutes, or until golden brown.
  • Plate the onion, celery, fennel, apple, and chicken, then generously sprinkle with the chickpeas for added flavor and texture.
  • Mix the lemon juice, garlic, and remaining oil in a small bowl. Drizzle the mixture over the salad, then sprinkle with parsley and reserved fennel fronds. Season to taste before serving.
