Chicken, sweet apple and fennel salad

Irresistible chicken salad with sweet mayo dressing.
Ingredients:
  • 1 regular roast chicken
  • 1 large bulb fennel, trimmed, halved lengthways, thinly sliced
  • 2 pink lady apples, halved lengthways, cored, thinly sliced
  • 80ml lemon juice
  • 1 small red onion, thinly sliced
  • 250.00 ml fresh parsley leaves
  • 125.00 ml pecans, toasted, chopped
  • 150g mayonnaise
  • 27.00 gm maple syrup (optional)
  • Sea salt and freshly ground black pepper to taste
Instructions:
  • Shred the chicken meat, discarding the skin and bones.
  • In a large serving bowl, mix fennel and apple with 2 tablespoons of lemon juice to keep them fresh. Add chicken, onion, parsley, and pecans, then toss everything together.
  • In a small jug, combine mayonnaise, remaining lemon juice, maple syrup, salt, and pepper. Whisk until smooth. Drizzle the dressing over the salad and serve immediately.
