"Crunchy candied pecans elevate a fall salad with tart apples, sweet pomegranate seeds, and tangy feta cheese."
Ingredients:
  • 0.5 cup pomegranate juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.25 cup canola oil
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 2 medium Granny Smith apples, cored and chopped
  • 1 (5 ounce) package baby spinach
  • 0.66666668653488 cup pomegranate seeds
  • 0.33333334326744 cup candied pecans
  • 0.25 cup crumbled feta cheese
Instructions:
  • In the bowl of a food processor, blend together pomegranate juice, balsamic vinegar, Dijon mustard, and honey until smooth. While the processor is running, slowly stream in canola oil until the dressing is emulsified. Season with salt and pepper, then set aside.
  • Combine apples, spinach, pomegranate seeds, pecans, and feta cheese in a big bowl. Drizzle with dressing and toss to mix thoroughly.
