Create a mouthwatering tray bake with apple-infused pork meatballs.
Ingredients:
  • 500g Pork Mince
  • 20.00 ml fennel seeds
  • 3 garlic cloves, crushed
  • 40.00 ml fresh oregano, chopped
  • 35g breadcrumbs
  • 1 Free Range Egg, lightly whisked
  • 2 small red apples, thickly sliced crossways
  • 2 small sweet potatoes, thickly sliced crossways
  • 600g Kent pumpkin, seeded, cut into wedges
  • 1 zucchini, thickly sliced diagonally
  • Oregano sprigs, extra, to serve
  • 2 x 250g pkts microwavable brown rice and quinoa mix, heated
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 220C and prepare a large baking tray lined with parchment paper.
  • In a bowl, mix together the mince, fennel seeds, garlic, chopped oregano, breadcrumbs, and egg. Season with your favorite spices. Shape the mixture into 16 even-sized meatballs.
  • Arrange the apple, sweet potato, pumpkin, and zucchini on the prepared tray. Add the meatballs on top. Bake for 30 minutes or until the meatballs are cooked through and the apple and vegetables are tender. Sprinkle with extra oregano before serving with the rice mixture and lemon wedges.
