Apple and berry bread pudding

Elevate your bread pudding with a delightful blend of apple and blueberries for a unique and delicious twist!
Ingredients:
  • 8 large apples, peeled, chopped
  • 168.75 gm pure maple syrup
  • 250.00 ml apricot jam
  • 12 thin slices wholegrain fruit bread, cut into triangles
  • 150g fresh blueberries or frozen blueberries
  • 3 eggs
  • 6 eggwhites
  • 1030.00 gm skim milk
  • 8.80 gm vanilla extract
  • 53.75 gm caster sugar
  • 1.25 gm ground nutmeg
  • 3.00 gm pure icing sugar
Instructions:
  • Preheat the oven to 160°C. Simmer apples with maple syrup in a covered saucepan on medium heat for 5 minutes until the apples are tender yet firm.
  • Spread a generous layer of jam on one side of each slice of bread. Arrange half of the fruit bread at the bottom of a 9-cup ovenproof baking dish. Top it with half of the apple mixture and sprinkle with half of the blueberries. Repeat the layers with the remaining bread, apple mixture, and blueberries.
  • In a jug, whisk together eggs, egg whites, milk, vanilla, caster sugar, and nutmeg. Pour the mixture over the pudding and let it stand for 15 minutes to allow the bread to soak up the liquid.
  • Bake uncovered for 45 to 50 minutes until custard sets. If top browns too quickly, loosely cover with foil after 30 minutes. Dust with icing sugar and serve warm.
