Apple and berry pies with homemade custard

Enjoy warm apple berry pies with homemade custard drizzle.
Ingredients:
  • 250g plain flour
  • 35g icing sugar
  • 140g chilled unsalted butter, chopped
  • 1 egg, lightly beaten
  • 1 egg yolk
  • 250g frozen mixed berries
  • 10.60 gm lemon juice
  • 2 large Granny Smith apples, peeled, cored, thinly sliced
  • 80g brown sugar
  • 600ml milk
  • 100ml pure (thin) cream
  • 1 vanilla bean, split, seeds scraped
  • 4 egg yolks
  • 60g caster sugar
Instructions:
  • In a food processor, blend the flour, icing sugar, and butter into fine crumbs. Add the egg yolk and 1/4 cup (60ml) cold water, and blend until a smooth ball of dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Preheat your oven to 190°C and prepare a baking tray by greasing and lining it with baking paper.
  • For the filling, toss together berries, lemon juice, apple, and sugar in a bowl. Set aside. Divide dough into four portions and roll out each piece on a lightly floured surface into a 15cm circle. Transfer to a baking tray and spoon a generous amount of filling onto the center of each pastry round, leaving a 3cm border. Seal the pastry by folding over the edges and gently pressing down. Brush pastry with beaten egg and bake until golden brown, about 20-30 minutes.
  • Prepare the custard by heating milk, cream, vanilla pod, and seeds in a saucepan. In a bowl, combine egg yolks, sugar, and cornflour until smooth. Once the milk mixture begins to bubble, slowly pour it into the egg mixture while whisking continuously. Transfer back to the pan over low heat and stir with a wooden spoon for 3-4 minutes until the custard thickens and becomes smooth.
  • Enjoy your pies accompanied by a velvety warm custard.
