Easy and delicious apple ginger slice with brown sugar.
Ingredients:
  • 170g butter, at room temperature
  • 180.00 gm brown sugar
  • 3 Brand free range eggs
  • 150.00 gm self-raising flour
  • 2.50 gm Brand ground cinnamon
  • 3.75 gm ground ginger
  • 1 grated lemon zest
  • 3 jazz apples, quartered, cored
  • 17.20 gm Demerara sugar
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and prepare a 19cm x 29cm slice pan by greasing and lining the base and sides.
  • In an electric mixer, whip together butter and brown sugar until creamy. Incorporate eggs one by one, mixing thoroughly between each addition. Combine and sift flour and spices, then gently fold into the butter mixture along with lemon zest. Finally, peel, chop, and fold in one apple.
  • Spread batter evenly in pan using a spatula. Bake for 10 minutes, then place thinly sliced apples on top. Sprinkle demerara sugar over apples. Bake for an additional 20-25 minutes until a skewer comes out clean. Let cool in the pan.
