Apple and golden syrup dumpling pie recipe

Cozy up with warm spiced apple dessert topped with fluffy scone dumplings and creamy custard. Delicious!
Ingredients:
  • 45g unsalted butter
  • 1kg apple
  • 160ml (2/3 cup) golden syrup
  • 55g (1/4 cup) brown sugar
  • 10.00 gm cornflour
  • 10.00 gm cold water
  • Bought ready-made custard, to serve
  • 190g (1 1/4 cups) self-raising flour
  • 60ml (1/4 cup) milk
  • 50g unsalted butter, melted, cooled
  • 1 egg, lightly whisked
Instructions:
  • Preheat the oven to 180C/160C fan forced. In a large, deep frying pan over medium heat, melt 25g of butter. Add apple slices, golden syrup, 1 tbsp of sugar, and a pinch of salt. Cook for 4-5 minutes until apples are just tender, stirring occasionally.
  • Combine cornflour with water in a small jug until smooth. Mix the cornflour and cinnamon into the apple mixture. Cook until thickened and coating the apples, then transfer to a 4.5cm-deep, 24cm round ovenproof dish.
  • In a bowl, mix together flour, sugar, and a pinch of salt. Add milk, butter, and egg and stir until well combined.
  • In a small saucepan, gently melt the rest of the butter over low heat. Spoon dollops of the dumpling mixture over the apple layer, then sprinkle with the remaining sugar. Pour the melted butter evenly on top. Place the pie dish on a baking tray and bake for about 30 minutes, until the dumplings turn golden brown. Serve with a drizzle of custard.
