Apple and Honey Sorbet

Rosh Hashana sorbet: White and green, tangy with green apples, sweet with eucalyptus honey. Refreshing and delightful. Perfect for the holiday feast.
Ingredients:
  • 1.25 pounds Granny Smith apples, cored and thinly sliced
  • 1.5 cups water
  • 1.5 cups sugar
  • 1.5 lemons, juiced
  • 1 tablespoon honey
Instructions:
  • Combine apples and the fresh, citrusy zing of half a lemon in a large resealable bag or container with a lid. Freeze for several hours or overnight to lock in the flavors.
  • Bring water and sugar to a boil in a small saucepan. Simmer for 5 minutes over low heat. Remove from heat and stir in honey. Allow to cool completely.
  • Blend the apple with the juice of 1 lemon and cooled sugar syrup until smooth, leaving the peel for added texture.
  • Churn the mixture in an ice cream machine following the manufacturer's instructions. Allow the sorbet to soften at room temperature for 10 minutes before serving.
