Apple and pecan banana bread

Elevate traditional banana bread with apple and honey-roasted pecans.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 5.00 gm ground cinnamon
  • 8.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • Pinch of salt
  • 155g (3/4 cup, firmly packed) light brown sugar
  • 250ml (1 cup) light olive oil
  • 3 eggs, lightly whisked
  • 650.00 gm mashed banana
  • 2 Granny Smith apples, peeled and cored
  • 20g butter
  • 36.00 gm sugar
  • 375.00 ml toasted pecans, coarsely chopped
Instructions:
  • Preheat the oven to 180C. Grease a 7cm-deep, 10 x 20cm loaf pan with oil and line it with baking paper, ensuring the paper overhangs the sides.
  • In a large bowl, combine sifted flour, cinnamon, baking powder, bicarbonate of soda, salt, and sugar. Create a well in the center and add oil, egg, and vanilla. Gently mix until just combined, then fold in the mashed banana until just incorporated.
  • Prepare 2 Granny Smith apples by peeling, coring, and coarsely chopping them. In a frying pan, melt 20g butter and then add the prepared apple along with 2 tablespoons of sugar. Stir and cook for 5 minutes until the apple is tender.
  • Fold in 1 cup of toasted coarsely chopped pecans into the banana bread batter. Pour the batter into the pan and even out the surface. Sprinkle another 1/2 cup of pecans on top and drizzle with honey. Bake for 1 hour and 20 minutes or until a skewer comes out clean when inserted into the center.
