Enhance apple cake with sweet & spicy flavors, serve with ice cream for a decadent treat.
Ingredients:
  • Melted butter or margarine, for greasing
  • 2 medium Granny Smith apples
  • 220g (1 cup) caster sugar
  • 185g (1 1/4 cups) plain flour
  • 2.50 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 1 tsp allspice
  • 125g pecan nuts, roughly chopped
  • 125g butter,
  • Melted cream or vanilla ice-cream, to serve
Instructions:
  • Heat your oven to 180°C.
  • Prepare a 20cm springform pan by lining it with non-stick baking paper and greasing it with melted butter or margarine.
  • Prepare the apples by peeling, coring, and halving them, then slicing into 1/2 cm thick pieces.
  • Mix together caster sugar, plain flour, bicarbonate of soda, cinnamon, allspice, and pecans. Then incorporate egg and melted butter, stirring until fully combined.
  • Evenly spread the mixture into the greased springform pan and bake in the preheated oven for 55-60 minutes until the cake is softly firm to the touch, boasting a divine gooey texture.
  • Allow the cake to rest in the pan for 5 minutes to set, then carefully transfer it to a wire rack. Enjoy warm or cooled, topped with a dollop of cream or a scoop of ice-cream.
