Sweet and tangy apple butter and sour cream cake with a delectable cinnamon-pecan topping.
Ingredients:
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup chopped pecans
  • 1 teaspoon baking powder
  • 0.5 cup butter, room temperature
  • 0.75 cup apple butter
  • 0.5 cup whole bran cereal or wheat germ
  • 2 eggs, room temperature
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch pan.
  • Combine brown sugar, cinnamon, nutmeg, and chopped pecans to create a flavorful topping.
  • Combine the flour, baking powder, baking soda, and salt by sifting them together.
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs one at a time, fully incorporating each before adding the next. Mix in apple butter, vanilla, and wheat germ or bran cereal. Alternate adding sifted dry ingredients with sour cream, mixing well after each addition.
  • Layer half of the batter in the pan, sprinkle with half of the topping. Then, add the rest of the batter and top with the remaining topping.
  • Bake until a toothpick inserted in the center comes out clean, approximately 40 minutes in the preheated oven.
