Spiced apple cake with brown butter icing recipe

Wow your guests with a spiced apple cake topped with decadent brown butter icing. Perfect for sharing over a cup of tea - you won't be able to resist!
Ingredients:
  • 80g unsalted butter, chopped
  • 110g caster sugar
  • 55g brown sugar
  • 250g Apple Sauce
  • 1 Free Range Egg
  • 260g plain flour
  • 2.50 gm bicarbonate of soda, sifted
  • 2.50 gm ground cinnamon
  • 0.60 gm salt
  • Salted caramel topping, to serve
  • 170g unsalted butter, chopped
  • 240g icing sugar mixture
Instructions:
  • 1. Preheat the oven to 180°C. Grease a 20cm square cake pan and line the base and sides with baking paper. 2. In a small saucepan over medium heat, melt the butter until it turns golden brown, stirring constantly. Allow it to cool slightly.
  • In a large bowl, pour in the butter. Add the mixed sugar, apple sauce, and egg, then whisk until well combined.
  • In a large bowl, combine the flour, bicarbonate of soda, cinnamon, and salt. Mix in the apple sauce mixture until just combined. Transfer the mixture into the prepared pan and even out the top.
  • Bake for 30-35 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • In a small saucepan over medium heat, melt the butter until it turns a golden brown color, stirring constantly for about 3 minutes. Transfer the melted butter to a heatproof bowl and refrigerate for about 1 hour until it becomes firm.
  • Beat butter in a bowl with an electric mixer until very pale. Gradually add icing sugar in batches, beating well after each addition. Continue beating for about 4 minutes until pale and fluffy.
  • Place the cake on a serving plate, evenly spread the burnt butter icing on top, slice into pieces, and serve with a drizzle of caramel topping.
