Brown Sugar-Spice Cake with Caramelized Apples

Indulge in a flavorful spice cake with Gold Medal® flour, caramelized apples, and whipped cream; a delectable dessert choice.
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1 cup finely chopped peeled apple (1 medium)
  • 6 medium apples, peeled, sliced (about 8 cups)
  • 1 cup packed brown sugar
  • 1 cup heavy whipping cream
Instructions:
  • Preheat your oven to 350°F and generously coat the bottom of a 9-inch square pan with baking spray that includes flour.
  • In a large bowl, cream together butter, 1/2 cup brown sugar, and eggs using an electric mixer until blended. Increase speed to medium and beat until well combined. Add flour, baking powder, baking soda, ginger, nutmeg, cloves, salt, and sour cream. Mix on low speed until combined, then beat on medium speed for 1 minute. Fold in chopped apple, then evenly spread batter in the pan.
  • Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean and the top is golden brown. Let it cool for 10 minutes, then gently loosen the cake from the pan with a knife and transfer it to a heatproof serving plate. Allow the cake to cool for an additional 30 minutes.
  • In a 12-inch skillet, caramelize the sliced apples with 1 cup of brown sugar over medium-high heat for 20 to 25 minutes, stirring occasionally, until the apples are tender and caramelized.
  • In a chilled large deep bowl, use an electric mixer on low speed to whip the whipping cream until it starts to thicken. Increase the speed gradually to high and whip until soft peaks form. Spread the Caramelized Apples over the cake and garnish with dollops of whipped cream.
