Indulge in a moist cinnamon-spiced cake bursting with walnuts, apple chunks, and topped with rich vanilla browned butter frosting.
Ingredients:
  • 1 cup butter or margarine, softened
  • 2 cups granulated sugar
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups coarsely chopped peeled baking apples (3 medium)
  • 1 cup chopped walnuts
  • 1/2 cup butter (do not use margarine)
  • 3 1/4 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 to 3 tablespoons milk
Instructions:
  • Preheat the oven to 350°F and generously coat a 12-cup fluted tube cake pan with baking spray that includes flour.
  • In a large bowl, use an electric mixer to beat 1 cup of butter and granulated sugar until light and fluffy. Mix in eggs one at a time until well combined, then add 1/2 teaspoon vanilla. Stir in flour, baking soda, salt, and cinnamon until just combined. Gently fold in apples and walnuts before spooning the batter into the pan.
  • Bake for 50 to 65 minutes until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then remove from pan onto a cooling rack. Allow to cool completely, about 1 hour 30 minutes.
  • In a 2-quart saucepan, melt 1/2 cup of butter over medium heat until golden brown while stirring constantly. Slowly mix in powdered sugar using a spoon. Add 1 teaspoon of vanilla and enough milk to achieve a smooth frosting consistency. Generously spread the frosting over the cake's top and partially down the sides. Serve by slicing the cake with a serrated knife.
