Indulge in a cozy fall morning treat: apple coffee cake with warm spices, fresh apple chunks, and a cinnamon crumble topping.
Ingredients:
  • 0.5 teaspoon butter, or as needed
  • 2 cups all-purpose flour
  • 0.75 cup brown sugar
  • 0.5 cup vegetable oil
  • 0.5 cup white sugar
  • 4 teaspoons ground cinnamon
  • 0.5 teaspoon fine salt
  • 0.5 teaspoon ground ginger
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.75 cup buttermilk
  • 2 apples - peeled, cored, and cut into 1/2-inch chunks
Instructions:
  • Preheat the oven to a cozy 325 degrees F (165 degrees C, if you prefer metric). Generously butter an 8-inch glass baking pan.
  • In a large bowl, combine flour, brown sugar, oil, white sugar, 2 teaspoons cinnamon, salt, and ginger. Transfer 1/2 cup of this mixture to a separate bowl for the crumble topping and mix in the remaining 2 teaspoons of cinnamon.
  • Incorporate the baking powder and baking soda into the flour mixture by whisking them together.
  • Combine buttermilk and egg in a measuring cup, then add this mixture to the large bowl with flour and apples. Stir until everything is just blended and no dry spots remain. Transfer the mixture to the prepared pan and sprinkle with the crumble topping.
  • Bake in the preheated oven for 40 to 50 minutes, or until the apples are tender and a toothpick inserted into the center comes out dry.
