Delight in apple pie cupcakes with spiced icing, ideal for a cozy fall treat with coffee.
Ingredients:
  • 4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon ground cinnamon, or to taste
  • 0.5 teaspoon ground nutmeg, or to taste
  • 1.6666667461395 cups milk
  • 6 eggs
  • 1 tablespoon vanilla extract
  • 2.5 cups unsalted butter, melted
  • 3 apples, peeled and diced
  • 2.5 cups unsalted butter
  • 2 pounds confectioners' sugar
  • 0.5 cup milk
  • 5 tablespoons ground cinnamon
  • 2 tablespoons ground nutmeg
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 24 mini muffin tins by lining with paper cups or greasing with butter.
  • In a bowl, mix together flour, baking powder, cinnamon, and nutmeg.
  • In a bowl, use an electric mixer to blend sugar, milk, eggs, and vanilla extract until creamy. Slowly stream in melted butter. Gradually mix in flour until combined. Gently fold in apples. Transfer batter to mini muffin cups.
  • Bake until golden in the preheated oven for 15 minutes. Cool on a wire rack for 5 minutes, then carefully invert cupcakes onto a serving plate or cooling rack. Let cool completely for at least 15 minutes while preparing the icing. Run a table knife around the edges to loosen.
  • In a large bowl, whip butter with an electric mixer until creamy. Slowly incorporate sugar, milk, cinnamon, and nutmeg, mixing until fully combined. Frost the cupcakes with the icing.
