Indulgent caramel apple cake with juicy chunks of apple and a rich buttery glaze.
Ingredients:
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 3 cups thinly sliced apples
  • 0.5 cup chopped pecans
  • 0.5 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 12-cup fluted tube baking pan, like a Bundt® pan.
  • In a stand mixer bowl with a paddle attachment, mix together white sugar and vegetable oil. Then, beat in the eggs and stir in the vanilla extract.
  • In a bowl, mix flour, baking soda, nutmeg, cinnamon, and salt. Gently incorporate the flour mixture into the egg mixture until just combined. Fold in apples and pecans by hand to create a thick batter. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for 1 hour and 10 minutes until the cake is beautifully golden brown. Let the cake cool in the pan after removing it from the oven.
  • In a small saucepan over medium heat, melt together butter, brown sugar, milk, and 1 teaspoon vanilla extract. Once boiling, simmer until a thick glaze forms, approximately 1 minute.
  • Loosen the cake edges using a fork, then generously pour the glaze over the cake. Allow the cake to cool in the pan for approximately 10 minutes.
