Seasonal apple cake - simple and delicious for any gathering
Ingredients:
  • 376.25 gm caster sugar
  • 62.50 gm warm water
  • 2 golden delicious apples, cored, thinly sliced
  • 4 eggs, at room temperature
  • 4.40 gm vanilla extract
  • 113.75 gm light olive oil
  • 150.00 gm self-raising flour
  • 125.00 ml plain flour
  • double cream, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 22cm round cake pan and line it with baking paper on the base and sides.
  • In a non-stick saucepan, combine 1 cup sugar and warm water over medium-low heat. Stir and cook for 3 minutes until sugar dissolves. Increase heat to medium-high and boil gently for 15 minutes until a toffee forms. Pour into a pan and arrange apple slices in a circular pattern, overlapping slightly.
  • In a large bowl, combine eggs, vanilla, oil, and the remaining 3/4 cup sugar. Use an electric mixer to beat until thick and pale. Sift flours over the egg mixture and gently fold through using a large metal spoon. Spoon the mixture over the apple.
  • Bake the cake for 50-55 minutes until a skewer comes out clean. Let it cool in the pan for 5 minutes, then invert onto a plate. Serve warm or cold with a dollop of cream.
