Caramel Apple Cake

Delicious caramel-glazed apple spice cake made simple with Betty Crocker™ mix.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 large Braeburn apple, peeled, chopped
  • 1 cup chopped pecans, toasted*
  • 1/2 cup packed brown sugar
  • 1/4 cup butter
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 1 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pan). Grease an 8- or 9-cup fluted tube cake pan with shortening and lightly flour it.
  • Follow the instructions on the cake mix box, mixing in water, oil, and eggs. Gently fold in apple and 1/2 cup of pecans. Transfer the batter into the pan.
  • Bake for 45 to 50 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then transfer from pan to a cooling rack. Let it cool completely for about 1 hour.
  • In a 2-quart saucepan, combine brown sugar, butter, and milk. Bring to a boil over medium heat, whisking constantly. Boil for 1 minute. Remove from heat and stir in vanilla. Slowly add powdered sugar until smooth. Stir gently for 2 to 3 minutes until slightly thickened. Pour the glaze over the cake, letting it drizzle down the sides. Sprinkle with remaining 1/2 cup pecans.
