Apple-Walnut Cake with Caramel Glaze

Bake a fragrant apple-walnut cake with cinnamon, ginger, and cloves. Top with caramel sauce for a delicious fall treat.
Ingredients:
  • 2 cups packed brown sugar
  • 1 1/2 cups vegetable oil
  • 3 eggs
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup chopped walnuts
  • 2 large apples, peeled, shredded (about 2 cups)
  • 2 tablespoons butter or margarine, softened
  • 1 cup powdered sugar
  • 3 tablespoons butterscotch-caramel topping
  • 1 tablespoon milk
  • Additional ground cinnamon, if desired
Instructions:
  • Preheat oven to 350°F and generously grease a 12-cup fluted tube cake pan with shortening, then lightly dust with flour.
  • In a large bowl, use an electric mixer to beat brown sugar, oil, and eggs until light and fluffy. Add all remaining ingredients except walnuts and apples, and beat on low speed until smooth. Gently stir in walnuts and apples with a spoon, then spoon the batter into the pan.
  • Bake for 1 to 1 hour 10 minutes until a toothpick inserted near the center comes out clean. Let it cool for 10 minutes. Invert a heatproof plate over the pan, flip it, and remove the pan. Allow it to cool for 30 minutes before serving.
  • In a medium bowl, whisk all glaze ingredients (excluding cinnamon) until silky. Drizzle the glaze over the cake, letting it cascade down the sides. Finally, dust with a sprinkle of cinnamon.
