Indulgent apple crumb coffee cake with buttery cinnamon-walnut topping.
Ingredients:
  • 2 teaspoons unsalted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 1.5 cups finely chopped toasted walnuts
  • 0.33333334326744 cup packed light brown sugar
  • 0.33333334326744 cup white sugar
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 cup white sugar
  • 0.5 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1 cup plain yogurt
  • 1.5 teaspoons vanilla extract
  • 2 Honeycrisp apples
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously butter a 9x12-inch baking dish.
  • Prepare the dry mixture by whisking together flour, baking powder, baking soda, and salt in a bowl. Set aside for later use.
  • Prepare the indulgent crumble by tossing walnuts, brown sugar, white sugar, melted butter, cinnamon, and salt in a bowl until the mixture envelops the walnuts and sugar in buttery goodness.
  • Combine sugar, butter, and eggs until smooth. Mix in yogurt and vanilla until well combined.
  • Gently combine dry flour mixture with wet ingredients using a whisk until no flour streaks remain. Avoid overmixing.
  • Prepare the apples by coring and slicing them into thin pieces. Stack a few slices together, then dice them into cubes. Gently fold the diced apples into the cake batter until just combined using a spatula.
  • Layer half of the batter into the baking dish, followed by half of the crumble mixture. Add dollops of the remaining batter and spread evenly. Sprinkle the rest of the crumb mixture on top and press gently into the batter.
  • Bake in the center of the preheated oven for about 40 minutes until a toothpick inserted into the center comes out clean. Allow to cool to room temperature for about 30 minutes before slicing and serving.
