Moist apple streusel cake with layers of apples and sweet crumbles inside and on top.
Ingredients:
  • 1.5 cups packed light brown sugar
  • 0.75 cup all-purpose flour
  • 0.5 cup butter, chilled and diced
  • 1 cup chopped walnuts
  • 3.25 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 1.5 cups white sugar
  • 0.75 cup butter, room temperature
  • 3 large eggs
  • 16 ounces plain low-fat yogurt
  • 2 Granny Smith apples - peeled, cored and finely diced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease and flour a 9- or 10-inch Bundt pan.
  • Prepare the irresistible streusel topping by combining brown sugar, flour, and cinnamon in a medium bowl. Using a fork, blend in butter until the mixture becomes crumbly. Gently fold in walnuts and set it aside for later.
  • Prepare the dry ingredients by whisking flour, baking powder, and baking soda in a medium bowl; set it aside. In a separate large bowl, cream together sugar and butter until light and fluffy. Gradually mix in eggs one at a time, ensuring each is well incorporated. Add yogurt and vanilla, then gently fold in the dry ingredients until just combined.
  • In a prepared Bundt pan, spread one-third of the batter. Sprinkle a quarter of the streusel on top, then add a layer of apples. Follow with half of the remaining streusel. Pour in the rest of the batter and finish with the remaining streusel. Gently press down the top streusel layer into the batter.
  • Bake in the preheated oven for 50 to 60 minutes until a toothpick inserted in the center comes out clean. Let cool in the pan on a wire rack for 15 minutes. Invert the pan onto a cookie sheet, remove the Bundt pan, and let the cake cool completely.
