Apple-Pecan Coffee Cake

Delicious apple coffee cake with a crunchy streusel topping.
Ingredients:
  • 1/2 cup coarsely chopped pecans
  • 1/4 cup firm butter or margarine
  • 3 tablespoons packed brown sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 cup Fiber One™ original bran cereal
  • 1 cup milk
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 2/3 cup granulated sugar
  • 1/4 cup vegetable oil
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 egg whites or 2 eggs
  • 1 medium all-purpose apple (Gala, Haralson, McIntosh), peeled and chopped
Instructions:
  • Preheat oven to 375°F. Grease a 9-inch square pan with shortening and a light dusting of flour, or use baking spray with flour. In a small bowl, combine streusel ingredients and set aside.
  • Put the cereal in a resealable food-storage plastic bag and crush it using a rolling pin or meat mallet, or pulse in a food processor. In a large bowl, combine the crushed cereal with milk and let it sit for 5 minutes. Mix in all the remaining coffee cake ingredients except the apple and stir for 30 seconds. Gently fold in the apple. Spread half of the batter in the pan and sprinkle the streusel on top. Then, spoon the rest of the batter over the streusel and spread it evenly.
  • Bake the dish for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Serve while warm.
