Apple-studded quick bread with crunchy streusel layers, reminiscent of a delicious apple fritter with a coffee cake twist.
Ingredients:
  • For the streusel
  • 1/4 cup salted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup finely chopped pecans, optional
  • For the batter
  • 1 1/2 cups plus 2 tablespoons all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar, lightly packed
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/3 cup plus 3 tablespoons unsalted butter, melted, divided
  • 1/4 cup whole milk
  • 2 Granny Smith apples, peeled, cored, and chopped into 1/2-inch pieces
  • For the glaze
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons whole milk
Instructions:
  • Preheat the oven to 350°F, then prepare the loaf pan by greasing it and lining it with parchment paper.
  • For the streusel, mix butter, brown sugar, flour, cinnamon, and nutmeg in a bowl. Use your hands to blend until a crumbly mixture forms. Optionally, toss in pecans. Keep aside.
  • Prepare the batter: Combine 1 1/2 cups of flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl. In another medium bowl, whisk together brown sugar, eggs, sour cream, 1/3 cup of melted butter, milk, and vanilla until smooth. Gently fold the dry ingredients into the wet ingredients using a rubber spatula until fully combined.
  • Coat the chopped apples with the remaining 2 tablespoons of flour in a small bowl. Gently fold them into the bread batter.
  • Pour half of the batter into the loaf pan and even it out. Sprinkle half of the streusel on top. Pour the remaining batter, spread it evenly with a spatula, then sprinkle the rest of the streusel. Finish with a drizzle of the remaining 3 tablespoons of melted butter. Bake for 45-55 minutes until a toothpick comes out clean. Allow to cool in the pan for 10 minutes before transferring to a rack. Cool completely, then glaze and serve.
  • Prepare the glaze by combining powdered sugar and vanilla in a medium bowl. Gradually whisk in the milk, one tablespoon at a time, until smooth like heavy whipping cream. Drizzle over the cooled loaf, slice, and enjoy! Don't forget to rate the recipe below!
