Indulge in a cozy fall breakfast with baked apple cinnamon pecan delight, perfect for slow mornings with a cup of coffee.
Ingredients:
  • 1/3 cup sprouted whole wheat flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons butter, softened
  • 1 1/3 cups sprouted whole wheat flour
  • 1/2 cup cane sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt or kosher salt
  • 1/2 cup sour cream
  • 1/3 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup finely chopped, peeled apple
  • 3/4 cup powdered sugar
  • 3 to 4 teaspoons milk
Instructions:
  • Preheat the oven to 375°F and line 12 regular-size muffin cups with paper baking cups.
  • Combine the first 4 Streusel ingredients in a small bowl. Gradually add the softened butter, then use your fingers to blend it into the dry mixture until it becomes crumbly. Set aside.
  • Combine 1 1/3 cups flour, cane sugar, baking powder, baking soda, salt, and 1 teaspoon cinnamon in a large bowl until well mixed. In a separate small bowl, whisk together sour cream, melted butter, eggs, and vanilla until smooth.
  • Combine the sour cream mixture with the flour mixture in a large bowl and stir until just blended. Mix in the chopped apple, then gently fold in 1/2 cup of the streusel mixture.
  • Evenly distribute the batter into each muffin cup, then generously sprinkle about 1 tablespoon of the reserved streusel mixture on top of each muffin.
  • Bake for 18 to 22 minutes until a toothpick inserted in the center comes out clean. Let it cool for 15 minutes before removing from the pan.
  • Combine the Glaze ingredients in a small bowl until smooth and pourable. Drizzle over the muffins.
