Cinnamon apple coffee cake with Granny Smith apples and a sweet butter topping - ideal for brunch or dessert.
Ingredients:
  • 0.75 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.75 cup brown sugar
  • 1 large egg
  • 0.25 cup sour cream
  • 0.25 cup vanilla yogurt
  • 2 cups diced Granny Smith apple
  • 0.25 cup all-purpose flour
  • 2 tablespoons unsalted butter, cut into small pieces
Instructions:
  • Preheat the oven to 350°F (175°C). Grease and generously flour an 8-inch square baking dish for a perfect start to your delicious creation.
  • In a bowl, gently combine flour, cinnamon, baking soda, and salt.
  • In a large bowl, use an electric mixer to beat together brown sugar and butter until light, fluffy, and noticeably lighter in color. Add the egg, followed by sour cream, yogurt, and vanilla. Mix well. Slowly add the flour mixture, then gently fold in the apples. Pour the batter into the prepared baking dish.
  • Prepare the topping by combining brown sugar, flour, butter, and cinnamon in a bowl. Use a fork to mix until crumbly, then sprinkle over the batter.
  • Bake in the preheated oven for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Then, cool on a wire rack.
