Elevated coffee cake with apple pie filling, coconut, and pecans.
Ingredients:
  • 1 banana, cut into chunks
  • 1 (18.25 ounce) package yellow cake mix
  • 1 (15.25 ounce) can apple pie filling, or more to taste
  • 0.75 cup brown sugar
  • 0.5 cup flaked coconut
  • 0.5 cup chopped pecans
  • 0.75 cup confectioners' sugar
  • 5 teaspoons milk
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine eggs and ripe banana in a bowl, beating until smooth. Mix in cake mix and apple pie filling until batter is well combined. Pour the batter into the prepared baking dish.
  • Mix together the brown sugar, coconut, pecans, and cinnamon in a bowl. Sprinkle the mixture over the batter in the baking dish. Swirl it into the batter using a knife or toothpick.
  • Bake until a toothpick inserted in the center comes out clean, approximately 1 hour in the preheated oven.
  • In a bowl, whisk confectioners' sugar and milk until smooth icing forms. Drizzle the icing over the hot cake, let it cool to room temperature in the baking dish, cover with plastic wrap, and chill in the refrigerator until cold.
