Easy and adorable apple pie cookie cups made with Betty Crocker™ sugar cookie mix and spiced pie filling - perfect for fall!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Flour, butter and egg called for on cookie mix pouch for cutout cookies
  • 1 1/2 cups apple pie filling with more fruit (from 21-oz can)
  • 1 teaspoon sugar
  • 1/8 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 375°F. Grease and lightly flour 24 regular-size muffin cups with shortening.
  • Mix the cookie mix, flour, butter, and egg in a large bowl until a soft dough forms. Set aside 2 cups of the dough. Press a heaping tablespoon of the dough into the bottom of each muffin cup.
  • Dice the apple pie filling into small pieces, then add a generous 2 teaspoons of filling into the center of each cookie cup. Roll out the remaining dough on a floured surface to 1/8 inch thickness and use a small 1 to 1 1/2-inch cookie cutter to cut out 24 shapes of your choice. Place one cutout on top of the apple pie filling in each cookie cup.
  • Combine sugar and cinnamon in a small bowl, then sprinkle over the cutouts. Bake for 14 to 17 minutes until the cookie edges are deeply golden brown. Let cool in the pan on a cooling rack for 10 minutes. Use a metal spatula to loosen each cookie cup, then cool in the pan for an additional 20 minutes. Transfer cookies from muffin cups to a cooling rack to cool completely.
