Indulgent buttermilk cake with brown sugar, butter, and rum, or swap apple juice and pecans for a twist.
Ingredients:
  • 0.5 cup raisins
  • 1.5 tablespoons dark rum
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup butter, softened
  • 0.75 cup brown sugar, packed
  • 0.5 cup mashed ripe banana
  • 3 tablespoons low-fat buttermilk
  • 2 egg whites
  • 0.33333334326744 cup chopped walnuts
  • 1 tablespoon powdered sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease an 8x8 inch baking pan. In a microwave-safe bowl, combine raisins and rum. Microwave on High for 1 minute. Set aside for later use.
  • Combine flour, baking powder, baking soda, and salt in one bowl. In a separate bowl, cream butter and brown sugar until fluffy. Mix in banana, buttermilk, vanilla, and egg whites. Slowly add flour mixture, stirring until just combined. Fold in raisins and walnuts. Spread batter in pan.
  • Bake in a preheated oven until the top is golden, for approximately 30 minutes. Let it cool in the pan for 10 minutes, then cut into bars and transfer to a rack to cool completely. Sprinkle with powdered sugar.
