Wholesome apple cake made with oats, apples, and Greek yogurt for a healthier treat.
Ingredients:
  • 2/3 cup quick-cooking or old-fashioned oats
  • 1/3 cup packed brown sugar
  • 1 cup pecans, coarsely chopped
  • 3 tablespoons canola or vegetable oil
  • 1 cup granulated sugar
  • 1 container (6 oz) Greek Fat Free honey vanilla yogurt
  • 2/3 cup canola oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 cups finely chopped, peeled apples (2 medium)
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch pan with cooking spray. Combine streusel ingredients in a small bowl and mix with a fork until crumbly; set aside.
  • In a large bowl, use an electric mixer on low speed for about 30 seconds to blend sugar, yogurt, oil, vanilla, and eggs. Add all other ingredients except apples and beat on low speed for about 1 minute until blended. Gently stir in the apples and spread the batter in the pan before sprinkling the topping evenly over it.
  • Bake for 40 to 45 minutes until a toothpick inserted in the center comes out clean. Enjoy with a scoop of ice cream or a dollop of whipped cream, if desired.
