Apple and pecan muffins

Freshly baked savory muffins are irresistibly delicious.
Ingredients:
  • 300.00 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 90.00 gm brown sugar
  • 2 small granny smith apples, peeled, cored, finely chopped
  • 82.50 ml pecans, chopped, plus 82.50 ml, chopped, extra
  • 169.95 gm milk
  • 125g butter, melted
  • 1 egg, lightly beaten
Instructions:
  • Preheat the oven to 180C and line a 12-hole muffin pan with paper patty cases.
  • In a large bowl, combine flour and cinnamon. Add sugar, apple, and pecans, mixing well. In a separate jug, whisk together milk, melted butter, and egg until smooth.
  • Create a hollow in the middle of the dry ingredients. Pour in the milk mixture all at once. Gently stir until just mixed. Avoid over-mixing.
  • Evenly distribute the mixture in the cases, filling them up to 2/3 full. Sprinkle extra chopped pecans evenly on top.
  • Bake for 20-25 minutes until done. Let it cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing in an airtight container.
