Slow-Cooker Honey-Dijon Pork Roast

Savor slow-cooked pork roast with apple and honey-Dijon sauce for a delightful dinner.
Ingredients:
  • 1/2 cup chopped onion
  • 2 apples, peeled, sliced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon coriander seed, crushed
  • 1/4 teaspoon salt
  • 2 to 2 1/2 lb rolled boneless pork loin roast
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Instructions:
  • In a 4 to 6-quart slow cooker, mix together onions and apples. In a small bowl, stir together honey, mustard, coriander, and salt until well combined. Coat the pork roast with the mixture, then place it on top of the onion and apples.
  • Cover and simmer on the Low setting for 7 to 8 hours.
  • Transfer the pork from the slow cooker to a beautiful serving platter and delicately cover it with foil.
  • In a small saucepan, whisk together water and cornstarch until smooth. Stir in the apple mixture and juices from the slow cooker, then cook over medium heat until boiling, stirring occasionally. Slice the pork and serve with the sauce.
