Ingredients:
  • 3 pounds carrots, peeled and cut 1/2-inch thick on a bias
  • 1 1/4 cup water
  • 2 teaspoons kosher salt, divided
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon fresh sage, chopped
  • 1/4 teaspoon black pepper
Instructions:
  • Cook the carrots low and slow: Put the carrots in the slow cooker, pour in the water, and sprinkle with 1 teaspoon of kosher salt. Cook on low for 4 to 6 hours until tender. Drain and return carrots to the slow cooker.
  • To make the glaze, combine the remaining salt, butter, honey, Dijon mustard, sage, and black pepper in a bowl and mix until well combined. Pour the honey-Dijon mustard glaze over the carrots and toss to coat evenly. Season with additional salt and pepper to taste.
  • Lower the slow cooker to the warm setting. The carrots are ready to be served now, or you can cover and keep them warm for 1 to 2 hours.
