Slow cooker honey mustard pulled pork belly

Delicious pork belly burgers for a crowd-pleasing meal any night!
Ingredients:
  • 1.7kg boneless pork belly, pat dried
  • 18.20 gm extra virgin olive oil
  • 90g (¼ cup) honey
  • 80ml (⅓ cup) pure maple syrup
  • 1½ tbsp wholegrain mustard
  • Bread rolls, to serve
  • Coleslaw, to serve
Instructions:
  • Season the pork generously. In a large frying pan, heat oil over high heat. Cook the pork, skin-side down, for 7-8 minutes until golden. Flip and cook for an additional 5-6 minutes until lightly browned.
  • In a jug, mix together honey, maple syrup, and mustard. Season to taste.
  • Pour half of the irresistible maple syrup mixture into the bottom of your generously-sized 5.5L slow cooker. Gently place the pork into the slow cooker, then generously pour the remaining maple syrup mixture over the meat. Cover the slow cooker and let the magical flavors meld together on high heat for 4 hours and 30 minutes, or until the pork reaches that perfect melt-in-your-mouth tenderness.
  • With Wonder Claws, transfer the pork onto a large board or tray. Using the Wonder Claws, remove and discard the rind, and scrape off any excess fat from the top. Finally, shred the meat coarsely with the Wonder Claws.
  • Pour the maple syrup mixture into a jug. Remove and discard the fat layer from the top. Drizzle the pork with 2 tbsp of the maple syrup mixture. Serve the pork with the remaining maple syrup mixture, bread rolls, and coleslaw.
