Serve this deliciously saucy chicken dish with crusty bread for an irresistible meal.
Ingredients:
  • 18.20 gm olive oil
  • 2.50 gm sweet paprika
  • 8 chicken thigh cutlets, skin removed
  • 2 rindless bacon rashers, coarsely chopped
  • 20.00 gm cornflour
  • 2 tsp dry mustard powder
  • 160ml (2/3 cup) Chicken Style Liquid Stock
  • 46.80 gm wholegrain mustard
  • 23.40 gm dijon mustard
  • 57.20 gm Pure Australian Honey
  • 80g (1/2 cup) frozen peas, thawed
  • 40.00 ml cooking cream
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large bowl, mix together oil and paprika. Add chicken and toss until well coated. Heat a large non-stick frying pan over medium-high heat. Cook chicken for 5 minutes, turning occasionally until browned. Transfer chicken to a plate. Add bacon to the pan and cook, stirring occasionally, for 5 minutes until golden and crisp. Transfer bacon to the plate.
  • In the slow cooker, combine cornflour and mustard powder. Slowly whisk in stock, mustards, and honey until you have a smooth mixture. Add chicken and bacon, gently stir to mix, and cook on Low for 4 hours (or High for 2 hours). Finally, stir in peas and cream during the last 10 minutes of cooking.
  • Garnish the chicken with a sprinkle of fresh parsley before serving.
